Although we don't use these ingredients at Yaxche Maya Cuisine Restaurant, the Maya cooked with some ingredients which we would call unique.

Corn Smut

maya ruins mexicoUstilago maydis is a fungus that grows primarily on corn, called "Corn Smut" in the US. The corn kernels grow larger and turn gray. In modern Mexico, it is considered a delicacy and fetches high prices in the market.

Ancient Maya kept several breeds of dog for hunting and table fare. Dogs which were raised for meat were fed a primarily vegetarian diet, based mostly on maize, and were comparable to pigs. One breed was hairless and very similar to a pig in stature and flavor.

Iguana

Iguanas are plentiful in the Yucatan, and are still a staple for meat and eggs in hard times. Even today, they are frequently captured, skinned, and boiled or roasted for a meal.
